As the Disneyland Hotel prepares to reopen on Jan. 25, 2024, we get a preview of the royal culinary experience we can expect at the hotel.
Chef Laurent Lesage has an impressive background in prestigious kitchens, including the Royal Monceau in Paris and Michelin-starred restaurant El Bulli in Spain. He joined Disneyland Paris in 2017 and worked on several restaurants at the resort before getting involved in the reopening of La Table de Lumière.
Chef Olivier Arthur began his career at Disneyland Paris 24 years ago as assistant to the chef de partie. After working in several of the resort's restaurants, he now returns to his roots as head chef of the Royal Banquet.

Both chefs are excited about their roles in the reopening of the Disneyland Hotel. Chef Laurent Lesage highlights the inspiration he found in reopening a restaurant and designing a menu for La Table de Lumière, with particular attention to excellence in every detail of the dishes. Chef Olivier Arthur adds that the reopening of the iconic hotel is a unique adventure in which they are happy to participate.
The gentlemen worked on the design of the kitchens in collaboration with internal teams responsible for interior design. They had a say in menu design and worked closely with the FOOD Research & Development team to ensure the dishes reflected Disney's themes and stories.
La Table de Lumière will offer a sophisticated menu featuring high-quality, expertly prepared French ingredients. The restaurant will serve unique dishes, including langoustines with a crustacean coulis and cauliflower puree, as well as reinvented traditional recipes, such as the children's beef parmentier.
On the other hand, the Royal Banquet offers guests a wide range of wines and beverages carefully selected by the Beverage team. La Table de Lumière's children's menu has a place of honor, with themed dishes and special desserts, such as La Rose Enchantée, inspired by Beauty and the Beast.
With the reopening just around the corner, the chefs are feeling a studious mood as they make final preparations. However, they are confident and can't wait to welcome their first guests to this new culinary experience at the Disneyland Hotel.
